🥢 Spicy Stir-Fried Gopchang Recipe

Ingredients:

  • 300g cleaned beef small intestines (gopchang)

  • ½ onion, sliced

  • 1 handful of chopped cabbage

  • 1 green onion

  • 3–4 perilla leaves (optional)

  • Korean rice cakes (tteok), a few pieces

  • 1 tsp minced garlic

  • Cooking oil or chili oil

Sauce:

  • 1 tbsp gochujang (Korean red chili paste)

  • 1 tbsp gochugaru (Korean chili flakes)

  • 1 tbsp soy sauce

  • 1 tsp sugar

  • 1 tbsp cooking wine or mirin

  • Black pepper to taste

  • A drizzle of sesame oil + toasted sesame seeds

Instructions:

  1. Heat oil in a pan and stir-fry the gopchang over medium heat until lightly golden and fragrant.

  2. Add onion, cabbage, green onion, and rice cakes. Stir-fry until softened.

  3. Add the pre-mixed sauce and stir everything together until evenly coated.

  4. Add perilla leaves last for extra aroma, and give it one final toss.

  5. Finish with sesame oil and sesame seeds on top.

🍚 Use the leftover sauce to fry some rice at the end—it’s a Korean classic!
