🍈Melon Fried Rice
with a Sweet-and-Salty Twist
A refreshing variation on fried rice, this dish pairs the natural sweetness of melon with the rich depth of oyster sauce. The melon’s subtle sugars weave through the ingredients, creating a gentle, rounded flavour profile, while the shrimp adds a savoury, slightly nutty contrast that complements the melon’s juiciness. Presented in a hollowed-out melon bowl, it brings a fragrant and summery charm to the table. With its well-balanced flavours, this colourful dish stands strong on its own—no side dishes needed—making it a uniquely delightful Korean summer meal.
🧺Ingredients : 1 melon, 10 cocktail shrimp (pre-cooked and peeled), 1/2 onion,
1/3 carrot, 1 green onion (a bit), 3 tablespoons cooking oil, 1 tablespoon oyster sauce,
A pinch of ground black pepper, A sprinkle of toasted sesame seeds 👩🍳Instructions :
① Cut the melon in half and hollow out the inside to create a bowl.
② Finely dice the melon flesh, onion, and carrot. Thinly chop the green onion.
③ In a skillet over medium heat, warm the vegetable oil and sauté the green onion. Add the diced vegetables and cocktail shrimp, cooking for about 3 minutes.
④ Once everything is fully cooked, stir in the steamed rice, oyster sauce, and a dash of black pepper. Continue stir-frying until evenly mixed.
⑤ Fill the melon bowl with the fried rice and finish with a sprinkle of toasted sesame seeds on top.
💡 Tips : To deepen the flavour, try swapping the shrimp for pork. Adding a softly cooked sunny-side-up egg on top not only boosts visual appeal, making it more appetizing.
