🥢 What Is Bibimguksu?

Bibimguksu literally means “mixed noodles” in Korean. Much like the famous bibimbap, it’s all about mixing different ingredients together — in this case, thin noodles with a spicy and flavourful sauce, fresh vegetables, and a splash of sesame oil.

It’s a popular dish in Korea, especially during the summer or as a quick late-night snack. The aroma of sesame oil enhances the overall flavour and stimulates your appetite even more.

Let’s dive into this delicious and simple recipe! 📝 Ingredients (Serves 1)

Main Ingredients

  • 100g thin wheat noodles

  • ¼ slice of onion (thinly sliced)

  • ¼ cucumber (julienned)

  • 2 perilla leaves (shredded)

For the Sauce

  • 1 tbsp gochujang (Korean red chili paste)

  • 1 tbsp soy sauce

  • 1 tbsp red pepper flakes

  • 1.5 tbsp vinegar

  • 2 tbsp sugar

  • 1 tbsp minced garlic

  • 1 tbsp sesame oil


🍽 Instructions

  1. Thinly slice the onion, cucumber, and perilla leaves.

  2. Mix all the sauce ingredients in a bowl to make a flavourful dressing.

  3. Boil a pot of water and cook the noodles according to the package instructions.

  4. Once cooked, rinse the noodles under cold water and drain well.

  5. Squeeze out any excess water from the noodles and place them in a bowl.

  6. Add the vegetables and sauce, then mix everything thoroughly.

  7. Serve and enjoy your homemade bibimguksu!

  • Top with a boiled egg, roasted seaweed flakes, or toasted sesame seeds for extra flavour.

  • For chewier noodles, add a pinch of salt when boiling.
